Fennel Pork Sausage

Sausages were a big part of the Googa Mooga festival like this fennel pork sausage from Char No. 4.
By late in the afternoon, after a few beers a bunch of smaller items like a foie gras donut and roasted spring onion, I was ready for something meatier, like this fennel pork sausage.
This was a fairly average sandwich improved with a thick pile of coleslaw. The coleslaw was refreshing after a heavy dose of fats and sugars earlier that afternoon. Still, it was ultimately just a sausage topped with cabbage.
