Flan

Flan is an custard, an oft forgotten cousin of pudding, but tastier and not quite as mysteriously gelatinous.
Pudding gets its consistency from some magical alchemy involving gelatin, but flan’s rigidity comes straight from the protein rich eggs that make up the custard base.
In most encounters I’ve had, flan comes covered in a caramel syrup which compliments the egginess in an unexpected way, best tasted rather than described.
