A combination of soup dumplings and onion soup, this dish is both delicious and frustrating.
Soup dumplings are what they sound like: dumplings filled with soup. In this instance, the dumplings are filled with onion soup and then served on an egg plate, covered with mozzarella cheese and broiled.
The only criticism I really have is that the little divots holding the individual dumplings — five of them are under the cheese — are too small for a spoon. The dumplings usually crack as you eat them, spilling the soup into each divot and leaving it impossible to reach.
