Eggplant Sandwich

A hybrid of a eggplant parmesan and vegetable panini, this Italian sandwich proved a solid lunch.
The fried eggplant and mozzarella cheese seemed as though this sandwich would turn out to be a lot like a typical eggplant parmesan hero.
After a quick trip to the oven, the sandwich was warm but not hot and I realized that it included red peppers and olives.
A dash of balsamic vinegar sweetened everything just a bit.
I’ve come to think of Carmine’s as reliable when it comes to sandwiches, though for pizza I still prefer their competition across the street, Tony’s Pizza.
